These paletas use overripe bananas that might otherwise go to waste, blended with yogurt and honey and frozen. Inspired by Brazil's light, chilled street desserts, they gain extra crunch from coconut toasted in an air fryer.

How to make it?

Toast the coconut

Spread the coconut in the air fryer basket and toast at 150°C / 300°F for 6 minutes, until lightly fragrant. If you do not have an air fryer, toast it in an oven at the same temperature for 6 minutes.

Make the banana mixture

10 min

Blend the ripe bananas with the yogurt, honey and cinnamon until smooth.

Fill the molds and add the sticks

Fill the paleta molds with the mixture and insert the sticks.

Freeze

240 min

Put the molds in the freezer for at least 240 minutes, until completely solid.

Serve

5 min

Remove the paletas from their molds, coat with the toasted coconut and serve immediately.

Reminder

The riper the bananas, the sweeter the paletas will be, with no need for extra sugar. If you do not have an air fryer, you can toast the coconut for 6 minutes in an oven preheated to 150°C / 300°F. Allergens: contains milk and dairy products (yogurt).

Kalıpları 240 dakika yerine 3 saatte kontrol ettim ve ortası hâlâ yumuşaktı, çubukları çıkarırken biraz eğildi. Tam süresini beklemek gerçekten şarttı, keşke daha sabırlı olsaydım.

Haklısınız, kalıp kalınlığına göre 240 dakika bile bazen yetmeyebilir; bir gece dondurucuda bekletmek en güvenlisi. Sonraki seferde en az 6 saat ayırmanızı öneririm.

Bal bulamadığım için yerine az miktarda hurma ezmesi kullandım, tatlılık dengesi hiç bozulmadı ve hatta daha karamelimsi bir aroma kattı. Muzlar zaten çok olgundu, ek tatlandırıcıya neredeyse gerek kalmadı.
