Inspired by rural Brazilian cooking, this snack is made by mixing whole-wheat flour and corn flour with Kashar cheese, then baking the batter in bite-size portions. It stays tasty when cold, making it easy to pack in a picnic basket.

How to make it?

Prepare the wet mixture

Whisk the eggs, milk, and cooking oil in a bowl.

Combine with the dry ingredients

Add the whole-wheat flour, corn flour, baking powder, and salt. Mix until smooth, then fold in the Kashar cheese.

Fill the pan

Divide the batter among greased mini muffin cups, filling each no more than two-thirds full.

Bake

Bake in an oven preheated to 190°C / 375°F for 20 minutes, until golden on top.

Reminder

Important: do not fill the cups more than two-thirds full, or the batter may overflow and spread in the oven. Allergens: gluten (flour) and dairy (Kashar cheese).
