A classic of British home cooking, this beef and mashed potato bake is made by topping seasoned ground beef and vegetables with mashed potatoes and baking until golden. It is the beef-based cousin of shepherd’s pie, which is made with lamb, and makes a hearty winter meal.
Cook the ground beef, onion, and carrot over medium heat for 10 minutes.
Add the tomato paste, broth, and thyme. Simmer over low heat for 20 minutes, then season with salt.
Mash the cooked potatoes with the butter and milk until smooth.
Spread the beef mixture in a baking dish and top it with the mashed potatoes.
Bake in an oven preheated to 200°C / 390°F for 20–25 minutes, until the top is golden.
Serve hot.
