Diced salmon enriches this version of the classic British leek and potato soup, made heart-friendly by using only olive oil. Pack it in a flask for lunch or serve it hot at brunch.

How to make it?

Sauté the vegetables

Heat the olive oil in a pan. Add the leeks and onion and cook until softened. Add the crushed garlic and cook for one more minute.

Boil the vegetables

15 min

Add the potato and vegetable stock. Bring to a boil, then reduce the heat and cook until the potatoes are tender.

Blend the soup

3 min

Blend the soup until smooth, then return it to the heat.

Add the salmon

5 min

Add the diced salmon and cook for a further 5 minutes. Season with lemon juice, salt, black pepper and dill, then serve.

Reminder

Do not add the salmon too early. Prolonged cooking makes it break apart and turns the soup cloudy. Allergens: contains fish (salmon).

Somon bulamadığım için alabalık kullandım, tadı hafif daha nötr oldu ama pırasa patates tabanı zaten çok lezzetliydi; sadece zeytinyağı kullanmak çorbayı hiç ağırlaştırmıyor, hafif kalıyor.

Çorbayı pişirdikten sonra somonu eklemeden önce dondurucuya ayırabilir miyim, yoksa balık dondurulmuş çorbada dokusunu mu kaybediyor? Pırasa ve patates kısmı gerçekten harika bir kıvamda oldu.
