Pastries and dough-based dishes
A British teatime classic, scones get their light, flaky texture from rubbing cold butter into the flour and working the dough as little as possible. Served with hot tea, these small bakes turn golden in just 15 minutes in the oven.
Mix the flour, baking powder, salt and sugar. Rub the cold butter cubes into the flour with your fingertips until the mixture resembles coarse sand.
Add the churned buttermilk and mix just until combined. Roll out to 2 centimeters thick and cut with a round cutter.
Brush the tops with beaten egg and bake in an oven preheated to 200°C / 390°F for 15 minutes, until golden on top.
Work the dough as little as possible. Too much kneading makes it tough, and the scones turn out bread-like rather than flaky. Allergens: contains gluten (flour), milk and dairy products, and egg.
