A pilaf of fresh or frozen broad beans and rice, brightened with fresh dill and cooked in olive oil. Light yet satisfying, it can be served with a main dish or enjoyed on its own.
Sauté the finely chopped onion in olive oil until lightly golden.
Add the shelled broad beans to the pot and sauté for about 5 minutes. Add the sugar and salt.
Add the drained rice and sauté for a few minutes. Pour in the hot water and, once it boils, reduce the heat to low and cook until the water is absorbed.
Turn off the heat. Place a paper towel over the pilaf, cover the pot with its lid, and let it rest for 10 minutes. Add the dill, stir gently, and serve.
Important: Rinse the rice and soak it in warm water for at least 15 minutes for firmer, separate grains. If using broad beans in their pods, blanch them for a few minutes and peel them; this noticeably improves the flavor.
