Buffalo milk has nearly twice the fat of cow’s milk, so when it ferments, it forms a finger-thick layer of cream on top. A long boil thickens this cream layer. The incubation temperature must stay within a narrow range: milk that is too hot kills the starter, while milk that is too cool will not set.

Boil the milk

30 min

Bring the milk to a boil in a heavy-bottomed pot over medium heat, then keep it over low heat for 25 minutes. Stir the bottom occasionally without disturbing the cream forming on the surface. The long boil evaporates some of the water and thickens the cream layer.

Cool the milk

10 min

Remove the pot from the heat and let the milk cool to 42–45°C / 108–113°F. If you do not have a thermometer, dip in your little finger: the temperature is right if you can count to ten; if you have to pull it out sooner, the milk is too hot.

Add the starter

Put the starter in a bowl, add a ladleful of warm milk, and whisk. Pour this mixture into the pot through the cream layer and stir once. Do not overmix or the cream layer will break apart.

Divide among containers and wrap

Divide the milk among bowls, cover them, wrap them in a blanket, and leave them in a warm place to ferment.

Reminder

Cover the containers and incubate them undisturbed for 6–8 hours at a steady temperature of about 40°C / 104°F, then refrigerate. Do not move the containers during this time; jostling can make the yogurt release whey and break the cream layer. Allergens: The ingredients include milk and dairy products, as well as tree nuts.
