Bulbul Yuvasi (Nightingale’s Nest) is a baklava made by gathering phyllo dough on a rolling pin, shaping it into a ring, and filling the center with pistachios. It uses the same gathering technique as twisted baklava, but the roll is shaped into a nest by joining its ends. Because the pistachios sit in the center well rather than inside the dough, they do not toast during baking and retain their color and flavor.

How to make it?

Make and cool the syrup

Bring the sugar and water to a boil and simmer over low heat for 12 minutes. Add the lemon juice just before removing it from the heat. The syrup is ready when the last drop falling from a spoon stretches into a thin thread. Set it aside to cool completely; it should be at room temperature by the time the baklava is done baking.

Prepare the pistachios and butter

Coarsely chop half the pistachios for the filling, and chop the rest more finely for the topping. Melt the butter and let it stand for 3 minutes, then skim off the clear butterfat; the white solids at the bottom will darken in the oven.

Gather the phyllo and shape it into a ring

Loosely wrap the buttered phyllo around a rolling pin, then push it from both ends toward the center to gather it. Pull out the rolling pin, shape the gathered phyllo into a ring, overlap the ends, and press them together. Leave a finger-width opening in the center; the pistachios will not fit if it closes.

Arrange on the baking sheet and fill

Arrange the nests with space between them on a greased baking sheet, seam sides down. Fill the center wells with the coarsely chopped pistachios and press gently with your fingertip. Drizzle the remaining clarified butter over them.

Bake

40 min

Bake in an oven preheated to 180°C / 355°F for 40 minutes. The nests are done when their sides are golden brown and they sound firm when tapped with a spoon. If the pistachios in the center start to darken, loosely cover them with foil for the last 10 minutes.

Add the syrup and garnish

Pour the cooled syrup with a ladle into the spaces between the nests in the hot baking sheet; pouring it directly over the pistachios in the center will dull their color. Once the sizzling stops, sprinkle the finely chopped pistachios into the centers of the nests.

Reminder

If the ends of the ring are not pressed together firmly, it will open in the oven and the nest will flatten. Place the seam side down on the baking sheet; the nest’s own weight will keep it closed.

Yufkayı oklavada büzerken çok sıkarsanız halka fırında açılıyor. Gevşek büzüp tepside yan yana sıkıştırmak daha iyi sonuç verdi. Fırından çıkar çıkmaz şerbetlemeyin, beş dakika beklettim ve halkalar şeklini koruyarak şerbeti çekti.

Halkayı gevşek büzmek doğru. Tepside sıkışık dizmek de fırında birbirlerine destek olmalarını sağlıyor, tek başına duran halka açılıyor.
