This loaf gets several days of softness from fine bulgur that is cooked, cooled, and added to the dough. The bulgur’s starch holds onto water during baking and acts like a reservoir of moisture inside the bread, slowly releasing it as the loaf stales. The bulgur must be cooled; warm bulgur would speed up the yeast and overproof the dough.

Soak the bulgur

Put the bulgur in a bowl, pour boiling water over it, stir, and cover. When it is ready, there should be no free water left, and the grains should feel soft when pressed between your fingers. Any hard grains will remain hard in the bread. Spread the bulgur on a wide plate and let it cool completely.

Knead the dough

Dissolve the yeast in the lukewarm water and let stand for 5 minutes. Add the flour, salt, and olive oil and knead for 9 minutes. The dough is ready when a piece stretches into a thin membrane.

Fold in the bulgur

Pour the cooled bulgur over the dough and fold it in from the edges, distributing it in about 2 minutes. The bulgur will make the dough feel wet; this is right. Do not dry it out by adding flour—the moisture is what keeps the bread soft. Cover the bowl and leave the dough to rise.

Shape the loaf

Turn the dough out onto a floured counter, fold the edges toward the center to shape a loaf, and place it in a greased loaf pan or on a parchment-lined baking sheet. Cover and leave it for the final rise.

Bake

42 min

Preheat the oven to 220°C / 430°F and place a pan of water on the lower rack. Score a deep slash across the loaf with a razor blade and bake for 42 minutes. It is ready when the crust is deep golden and the bottom sounds hollow when tapped. Let cool completely on a wire rack.

Reminder

Let the bulgur swell in boiling water for 30 minutes, then cool it completely. The dough also needs a 90-minute first rise and a 45-minute final rise after shaping. These times are not included in the recipe’s total time.

Bulguru kaynar suda ıslatıp soğutmadan hamura kattım, maya zarar gördü ve ekmek kabarmadı. Bulguru katlayarak eklemek de önemli, yoğurma sırasında katınca bulgur hamurun gluten ağını kesip ekmeği sıkı yapıyor.
