The sausage provides both the meat and cooking fat in this pilaf: cook the slices until they release their fat, then cook the pilaf in it, so no extra butter is needed. Tomato mellows the sausage’s spices. Bulgur absorbs hot water at twice its volume and is left to rest after cooking.

How to make it?

Cook the sucuk (beef sausage)

Cut the beef sausage into slices half a centimeter thick and cook them in a dry pot over medium heat for 5 minutes. The edges will curl and the fat will pool at the bottom. Although fermented and dried, the sausage is still raw: cook it until no pink remains in the center and its internal temperature reaches at least 71°C / 160°F.

Add the onion

Add the finely chopped onion to the sausage fat and cook for 5 minutes, until softened.

Cook the tomato

Add the grated tomato and cook for 4 minutes, until it releases its juices and they evaporate.

Toast the bulgur

Add the bulgur and stir for 2 minutes, until the grains are coated in fat.

Add the water and cook

Add the hot water, salt and Turkish red pepper flakes. Measure by volume: use one measure of pilaf bulgur to two measures of water. Once the liquid boils, reduce the heat, cover and cook for 12–15 minutes, until all the water has been absorbed.

Reminder

After cooking, remove the pilaf from the heat, place a cloth under the lid and let it rest for 10 minutes. Fluff with a fork.
