This hearty, economical Turkish soup combines red lentils, bulgur and onion, quickly cooked in a pressure cooker and blended to a purée. Its whole-grain ingredients make it filling yet light.

Step by Step

How to make it?

1

Sauté the vegetables

7 min

Sauté the onion and carrot in olive oil for 5 minutes, until soft. Add the tomato paste and cook for another 2 minutes.

2

Pressure-cook

12 min

Add the lentils, bulgur, water, salt and cumin, then close the lid. Cook for 12 minutes from when you hear it boiling.

3

Let the pressure drop

8 min

Remove from the heat and wait for the steam pressure to drop naturally.

4

Blend until smooth

5 min

Open the lid and leave to cool for a few minutes, then blend until smooth.

Reminder

After taking the soup out of the pressure cooker, let it cool for a few minutes before blending; otherwise, steam pressure can force the blender lid up. Allergens: contains wheat (gluten, bulgur).
