Buttercream is a frosting made by beating room-temperature butter with powdered sugar until light. Unlike whipped cream, it holds its shape in warm conditions; piped designs can last for hours, making it a popular choice for cake decorating. Butter temperature is the key: cold butter will not whip, and melted butter will not hold air.

Beat the butter on its own

Beat the room-temperature butter on high speed, without adding anything, for 5 minutes, until it turns from yellow to almost white and increases noticeably in volume. Shortening this step will leave the buttercream heavy and yellow; this is what makes it light.

Add the sugar in three batches

Sift the powdered sugar and add it in three batches, beating for 2 minutes after each addition. If you add it all at once, it can gather around the beaters instead of mixing in, leaving the buttercream grainy. Scrape down the sides of the bowl from time to time.

Add the milk and finish

Add the milk, vanilla, and salt and beat for 2 more minutes. The buttercream is ready when it holds on a spatula without falling off. If it is too thick, add 10 ml more milk; if it is too soft, add 30 g powdered sugar. Before transferring it to a piping bag, press it with a spatula to remove air pockets.

Reminder

Let the butter sit out for about 1 hour to reach room temperature; this time is not included in the recipe duration.
