Portugal’s national soup, caldo verde is made by enriching mashed potatoes with finely chopped kale and sausage. With its simple ingredients, it is one of the most beloved and hearty soups of the Portuguese countryside.

Cook the Potatoes

Heat some of the olive oil in a pot. Sauté the onion and garlic over medium heat. Add the potatoes and water, then cook over medium heat for 20 minutes, until the potatoes are tender.

Brown the Sausage
