Ice cream and chilled desserts
This no-bake refrigerator dessert is made by quickly softening grated carrots in a pressure cooker and simmering them with milk. The mixture is thickened with starch and chilled for several hours before serving.
Place the grated carrots and water in the pressure cooker, close the lid, and cook for 8 minutes.
Remove the cooker from the heat and wait 5 minutes for the steam to release naturally.
Add the milk and granulated sugar to the softened carrots. Simmer uncovered for 20 minutes, stirring.
Add the starch mixture that you dissolved in a few spoonfuls of cold milk. Cook, stirring, for 5 more minutes until thickened.
Divide the mixture among bowls and let it cool at room temperature for 20 minutes.
Chill the bowls in the refrigerator for at least 3 hours, until ready to serve cold. Serve with cinnamon and shredded coconut.
Do not add the starch directly to hot milk, or it will clump. First whisk it with a few spoonfuls of cold milk, then stir it in. Allergen: contains milk and dairy.
