Knead the Dough

Chalupa, a Puebla street food, is made by deep-frying thin disks of corn dough until they puff, then topping the crisp bases with layers of beans, cheese, and lettuce. This quick, hearty snack is easy to serve at a group dinner.
Knead the pre-cooked corn flour with the hot water and salt until a smooth dough forms. Divide it into four equal pieces.
Shape each piece into a thin disk about 0.5 cm thick.
Heat the cooking oil in a deep skillet. Fry the disks for 3 minutes on each side, until puffed and golden, then transfer them to paper towels.
Divide the mashed beans, grated kashar cheese, lettuce, and tomato among the warm bases, then serve.
Check the oil temperature while frying; if it is too low, the disks will absorb oil before they puff. Contains milk (kashar cheese).
