How to make it?

Cook the chickpeas

Discard the soaking water and bring the chickpeas to a boil in fresh water. Boil vigorously for at least 10 minutes, skimming off any foam, then reduce the heat and simmer for 40 minutes. The chickpeas should mash between your fingers without falling apart. Drain and let cool.

Chop the vegetables

Remove the tomato seeds and dice it finely. Peel and dice the cucumber to the same size, then finely chop the onion and green chile pepper.

Make the dressing

Whisk the tamarind paste, chaat masala, cumin, lemon juice, and salt together in a small bowl. The dressing should be pourable; if it is too thick, add one 15 ml measure of water.

Mix the cooled chickpeas and vegetables in a wide bowl. Drizzle with the dressing and toss from the bottom up two or three times.

Add the toppings

Reminder
Soak the chickpeas overnight in cold water and discard the soaking water. Add the tamarind and lemon 5 minutes before serving; adding acid earlier can make the salad watery and the chickpea skins soft.
