Quail has small, lean breasts; it cooks over charcoal in just a few minutes and dries out just as quickly. At the grill, it is butterflied and flattened, marinated in onion juice, then held flat over the coals with two crossed skewers. A flat bird cooks evenly all over; if it curls, the breast dries out while the legs remain undercooked.

Butterfly and flatten the quail

Turn the quail breast-side down. Using kitchen shears, cut along both sides of the backbone and remove it. Open the bird and press down on the breastbone with your palm to flatten it. Trim the wing tips and use tweezers to remove any feather stubs from the skin.

Make the marinade

Grate the onion, squeeze it through cheesecloth, and mix the juice with the olive oil, salt, black pepper, red pepper flakes, and thyme. Coat both sides of the quail with the marinade, place it in a covered container, and refrigerate.

Thread onto the skewers

Make a pair by threading both quail crosswise onto two skewers: run one skewer from the right leg to the left wing, and the other from the left leg to the right wing. This keeps the birds flat and prevents them from turning over above the coals.

Grill over charcoal

Set the skewers about 12 cm above the coals with the bone side facing the heat. Grill for 8 minutes. Turn the birds and cook the skin side for 6–8 minutes, until the skin is browned and taut, brushing with butter during the final minutes. The internal temperature where the thigh meets the body should reach 74°C / 165°F, and the juices should run clear when pierced with a knife.

Serve with sumac onions

Thinly slice the onion into crescents and rub it with sumac and parsley. Slide the quail off the skewers onto lavash flatbread and serve with the sumac onions.

Reminder

Marinate the quail in the onion juice in the refrigerator for at least 4 hours. After taking it off the coals, let it rest for 5 minutes; if you cut it before resting, its juices will run onto the plate.
