Inspired by poutine’s cheese curds, these bites are made by coating cheddar cubes with almond flour and crisping them in an air fryer. They have a crisp exterior and a squeaky center. Almond flour replaces wheat flour for a lower-carb coating.

Step by Step

How to make it?

1

Prepare the cheese

10 min

Cut the cheddar into cubes about 2 centimeters wide and freeze for 10 minutes; this helps the cubes hold their shape while being coated.

2

Coat the cheese

8 min

Mix the almond flour with the salt and black pepper. Dip the cheese cubes first in the beaten egg, then in the almond flour mixture, coating them thoroughly.

3

Air-fry

8 min

Brush the air fryer basket with olive oil and arrange the cubes with space between them. Cook in a preheated 200°C / 390°F air fryer for 8 minutes, until the coating is golden. If you do not have an air fryer, cook them for the same time on an oven rack in a preheated 200°C / 390°F oven.

4

Serve

2 min

Serve immediately while hot, when the centers are still squeaky.

Reminder

Do not skip freezing the cheese; otherwise, the coating may fall apart before the cheese melts in the air fryer. Contains dairy (cheddar), eggs, and almonds.
