This satisfying, high-fiber chilled dessert is made by soaking chia seeds in milk until they swell and become gel-like. A little honey adds sweetness, and fresh fruit makes it a wholesome snack.

Mix the ingredients

Mix the milk thoroughly with the honey and vanilla. Add the chia seeds and stir continuously for 2–3 minutes to prevent clumps.

Transfer the mixture to a jar and cover it. Refrigerate for at least 4 hours, preferably overnight, stirring once more during the first half hour so the seeds swell evenly.

Serve with fruit

Stir the thickened pudding gently before serving. Top with sliced fresh fruit and serve cold.
