This light Chinese sweet soup, tang shui, is made by infusing dried osmanthus flowers in syrup and combining it with longan and mixed fruit. Served cold, it also travels well in jars for a packed lunch.

How to make it?

Infuse the syrup

15 min

Bring the water and sugar to a boil in a pan and remove from the heat. Add the osmanthus flowers and leave to infuse for 15 minutes.

Strain and cool the syrup

30 min

Strain the infused syrup through a fine sieve and leave to cool to room temperature for 30 minutes.

Prepare the fruit

15 min

Slice the peach, remove the grapes from their stems and dice the melon. Divide between serving bowls.

Combine with the syrup

25 min

Pour the cooled syrup over the fruit and refrigerate for a further 25 minutes before serving.

Reminder

Let the syrup cool to room temperature before pouring it over the fruit. Hot syrup will soften the fruit and spoil its texture. Contains no allergens.

Şurubu 15 dakika yerine 25 dakika demledim, kokusu daha belirgin oldu ama biraz fazla tatlı kaçtı; şeker miktarını bir kaşık azaltıp aynı demleme süresini korumayı düşünüyorum.

Longan bulamadım, tazeyken de kurusu da yoktu bölgemde; onun yerine kutu ananas kullansam 70 dakikalık tatlının dengesini çok mu bozar, yoksa tatlılığı azaltmam mı gerekir?

Osmantus çiçeği bulamadığım için kuru papatya çayı kullandım, şurubun kokusu tarifte anlatılandan çok farklı çıktı ve ailem pek beğenmedi. Bu ikame gerçekten önerilmiyor, aramaya devam etmek daha iyi.
