Chorba frik is a hearty Tunisian soup made by simmering roasted green wheat with lamb in a tomato-based broth. The smoky aroma of frik gives it a character distinct from classic grain soups. It has a thick consistency that holds up well in a thermos for picnics.

How to make it?

Brown the meat

Heat the olive oil in a pot and brown the onion and cubed lamb on all sides.

Prepare the broth

Add the tomato paste and cumin and sauté for 1 minute. Add the water and salt and bring to a boil.

Add the frik

20 min

Add the rinsed frik, cover, and simmer over low heat until the meat and grain are tender.

Serve

Ladle the soup into bowls and serve hot.

Reminder

Rinse the frik several times in cold water before adding it; unrinsed frik can give the soup a dusty taste. Allergen: Contains gluten (frik).
