Knead the dough

A dough made with yeast, milk and mahlab is divided into small pieces, braided, sprinkled with sesame seeds and baked. This sweet bread from Armenian festive tables is easy to slice and pack in a lunchbox.

Cover the dough and leave in a warm place to rise for 45 minutes, until doubled in size.
Divide the risen dough into pieces and roll them into thin strands. Braid the strands and shape into rings.
Sprinkle with sesame seeds and bake in an oven preheated to 180°C / 355°F for 20 minutes, until golden.
Leave the dough to rise in a warm, draft-free place; a cold environment slows the rise considerably. Allergens: contains gluten (flour), milk and dairy products (milk, butter), eggs and sesame.
Fırınlama süresini 20 dakika yerine 25 dakika yaptım, üstü daha koyu altın rengi aldı ve içi tam kıvamında piştiğinden emin oldum. Susamı biraz daha bol serptim, çıtırlığı arttı.
Mayalandırma süresini 45 dakika yerine 30 dakikada kestim çünkü acelem vardı, hamur yeterince kabarmamıştı ve ekmek biraz sıkı çıktı. Bir dahaki sefere süreyi tam uygulayacağım.
Mahlep bulamadığım için yerine bir tutam vanilya kullandım, tadı biraz farklı oldu ama dokusu hiç bozulmadı. Örgüyü ilk defa yapıyordum, biraz zor oldu ama sonuç güzel çıktı.
Mahlep yerine vanilya kullanmak gayet mantıklı bir çözüm, tadı hafif değişse de dokuyu etkilemiyor. Örgü tekniği ilk seferde herkese zor gelir, birkaç denemeden sonra elinize yatacaktır.
