Work the bulgur with the pepper paste

These modern vegan bulgur patties are made by kneading fine bulgur with red pepper paste, without meat. They have a bold, spicy flavor and are wrapped in lettuce and served with lemon and pomegranate molasses. This much-loved appetizer comes from southeastern Turkey.
Put the fine bulgur in a large bowl and add the red pepper paste and tomato paste. Press and work them into the bulgur with your hands until the paste is thoroughly incorporated.
Add the grated onion, finely chopped green onion and parsley, Turkish red pepper flakes, and cumin. Knead thoroughly until the mixture is soft and sticky.
Add the pomegranate molasses, olive oil and salt, and knead for a few more minutes. Cover and leave to rest for 10 minutes so the bulgur can absorb the water.
Shape the mixture into walnut-sized pieces, wrap them in lettuce leaves, squeeze lemon over them and serve immediately.
Important: Knead the bulgur by pressing it with your hands for long enough to form a soft dough; if you rush, the mixture may fall apart. Adjust the pepper paste and red pepper flakes to taste; this recipe can be very spicy. Allergen: Bulgur is made from wheat and contains gluten.
