Civil, also called chechil, is a cheese from Erzurum made from the skim milk left after churning butter. Its low fat content is intentional: fat keeps the curds from stretching into fine strands in hot water. The curds are repeatedly stretched in warm water until they separate into hair-thin fibers, then salted.

How to make it?

Heat the milk and add the rennet

Heat the milk in a heavy-bottomed pot to 32°C / 90°F; when you dip in a finger, it should feel neither hot nor cold. Dissolve the rennet in half a glass of lukewarm water and drizzle it over the milk. Stir a few times, cover the pot, and do not disturb it again.

Drain the curds

The curd is ready when a knife cut separates cleanly from the side of the pot and clear yellow whey fills the cut. Cut the curd into 2 cm squares and let it rest for 10 minutes, then transfer it to a cheesecloth-lined strainer.

Knead in hot water

Transfer the drained curds to a wide bowl and gradually pour over water heated to 70°C / 158°F. Press and gather the curds with a wooden spoon, kneading them until they warm, merge, and become one stretchy mass. The curd is ready for the next step when you can lift it and stretch it without breaking.

Stretch into fine strands

Pull off a piece of the mass and stretch it between both hands in opposite directions. Fold it in half and stretch it again. Repeat this eight to ten times for each piece; the strands become finer with every fold. Stop when they are as thin as a hair. Overstretched strands will dry out and break.

Salt the strands

Rub the strands with rock salt and gather them loosely into a bundle. Store in a covered container in the refrigerator and consume within 1 week.

Reminder

After adding the rennet, leave the milk completely undisturbed for 60–90 minutes. Do not move or stir the pot during this time.
