This ice cream gets its naturally creamy texture from coconut milk and delivers rich flavor without animal products. Its tropical taste makes it a refreshing choice for vegan and dairy-free diets, and it is easy to make at home with just a few ingredients.
Whisk the coconut milk, sugar, vanilla and salt in a bowl until smooth, making sure the sugar dissolves completely.
Pour the mixture into a wide, shallow metal dish and place it in the freezer.
During the first 4 hours, stir the mixture with a fork or mixer once every hour to keep large ice crystals from forming. Then cover and freeze for at least 2 more hours.
Take the ice cream out of the freezer a few minutes before serving. Scoop it into balls and sprinkle with toasted coconut, if desired.
Important: Choose thick coconut milk for a smooth texture. If you do not use an ice cream maker, stir the mixture with a fork once every hour during the first four hours of freezing. Caution: Skipping the stirring can lead to large ice crystals and a hard texture.
