This sweet is inspired by Colombia’s tradition of spiced fruit dishes. Papaya is quickly softened in a pressure cooker with cinnamon, cloves, and ginger. Pressure cooking makes the fruit tender without a long simmer.

How to make it?

Prepare the Papaya

Peel and seed the papaya, then cut it into cubes.

Cook in the Pressure Cooker

15 min

Place the papaya in the pressure cooker with the cinnamon stick, cloves, ginger, sugar, lemon juice, and water. Close the lid. Once the cooker reaches pressure, reduce the heat and cook for 15 minutes.

Let the Pressure Release

10 min

Turn off the heat and wait 10 minutes for the pressure to release naturally before opening the cooker.

Thicken the Syrup

After opening the cooker, transfer the papaya to a bowl. Simmer the remaining syrup over low heat for 10 minutes to thicken, then pour it over the papaya.

Reminder

Remove all the papaya seeds thoroughly when cutting the fruit; any remaining seeds may leave a bitter taste. If the syrup becomes too thick on the stove, remember that it will thicken further as it cools.

Papayayı tohumlarından tam temizlemediğim için kompostoda hafif acımsı bir tat kaldı, ilk lokmada fark edince biraz hayal kırıklığına uğradım. Düdüklüdeki 15 dakika kıvamı gayet iyiydi ama bu detayı atlamak tadı bozdu.
