Prepare the Cornelian cherries
10 minRemove the stems and leaves from the Cornelian cherries and rinse them well.
This traditional Anatolian drink is made by boiling tart, bright red Cornelian cherries with sugar and straining them. Serve it cold for a refreshing beverage that is also rich in vitamin C.
Remove the stems and leaves from the Cornelian cherries and rinse them well.
Place the Cornelian cherries and water in a saucepan and bring to a boil over medium heat. Reduce the heat and simmer until the fruit softens and bursts.
Mash the cooked fruit with a ladle, then strain it through cheesecloth or a fine-mesh strainer to remove the skins and pieces of pit.
Stir the sugar into the strained liquid until dissolved. If desired, balance the flavor with lemon juice, then chill in the refrigerator before serving.
Important: Cornelian cherries are quite tart, so adjust the sugar to taste. Do not skip straining; hard pieces of pit can spoil the drink’s texture.
