These pickles are made by naturally fermenting hard, unripe green-yellow Cornelian cherries in brine; their flavor and texture resemble green olives. Ripe fruit breaks down in the brine, so only unripe fruit is used. No vinegar is added: the tartness comes from the fruit’s own acid and 3 to 4 weeks of lactic fermentation.

Prepare the brine

Bring the water to a boil, dissolve the salt, and let the brine cool completely. Salt should equal 5% of the water’s weight. Iodized table salt can cloud the brine and interfere with fermentation.

Sort the Cornelian cherries

15 min

Remove the stems. Set aside any bruised, cracked, or reddening fruit; only firm, unripe fruit should be pickled. Rinse in cold water and drain.

Pack the jar

Sterilize the jar in boiling water for 10 minutes. Pack the Cornelian cherries into the jar with the garlic, bay leaf, and thyme. Pour in the cooled brine until it covers the fruit by 2 cm. Place a clean glass weight or a small water-filled bag on top to keep the fruit submerged. Leave 2 cm of headspace because the brine can rise during fermentation. Close the lid without tightening it fully.

Reminder

Let the pickles ferment at room temperature (18–22°C / 64–72°F) for 3 to 4 weeks, then move them to a cool place or the refrigerator; this fermentation time is not included in the recipe time. Keep the fruit submerged in brine. If a thin white film forms on the surface, skim it off. If fuzzy or colored mold appears, discard the jar. Do not process lactic-fermented pickles in a boiling-water bath.

Kaç haftada yenir diye merak ettim, bende beş haftada tadı oturdu. Üçüncü haftada bir tane tattım, dışı ekşimiş ama içi hâlâ hamsıydı; sabırsızlanıp erken açmak kavanozun tamamını havayla buluşturuyor.

Süre ortamın sıcaklığına göre değişiyor. Serin yerde altı haftaya kadar çıkabilir; kızılcık zeytin gibi diş bırakmaya başlayınca hazırdır.

Defne yaprağını fazla koymayın, kızılcığın kendi kokusunu örtüyor. Bir litrelik kavanoza bir yaprak yeterli, ben ikişer koyduğum kavanozlarda kızılcığın o keskin ekşiliğini bulamadım.

Kızılcıkları sertken toplamak şart. Hafif kızarmış olanları da attım kavanoza, onlar salamurada yumuşayıp dağıldı, sert olanlar zeytin gibi kaldı. İkinci yıl ayıklamayı iki aşamada yaptım: önce dalından ayırırken, sonra kavanoza koyarken bir kez daha. Rengi dönmeye başlayan tek tane bile bulanıklık yapıyor, dağılan meyve salamuraya nişasta bırakıyor.
