A Cuban street-food favorite, mariquitas are made by slicing green plantains paper-thin and frying them until crisp. The air fryer uses less oil, making this a snack kids enjoy too.

Step by Step

How to make it?

1

Slice the plantains

4 min

Use a mandoline to slice the green plantains paper-thin.

2

Air-fry the plantains

8 min

Lightly coat the slices with olive oil. Preheat the air fryer to 200°C / 390°F, arrange them in a single layer in the basket, and air-fry for 8 minutes, turning occasionally. If you do not have an air fryer, preheat the oven to 200°C / 390°F and bake for the same amount of time.

3

Season and serve

1 min

Season with salt while hot and serve immediately.

Reminder

Slice the plantains as thinly as possible. Thick slices may stay soft instead of crisping in the air fryer.

Dilimleri sepete üst üste yığınca alttakiler yumuşak kaldı, çıtır çıkmadı. Tek sıra dizmek yerine iki partiye bölmem gerekiyormuş, ilk denemede bunu atladım; 8 dakikalık pişirme süresi de bu yüzden yetersiz kalmış olabilir.

Haklısınız, dilimlerin tek sıra halinde ve birbirine değmeden durması gerekiyor; kalabalık sepette buhar hapsolup çıtırlığı engelliyor. İki partiye bölmeniz doğru çözüm.

Dilimleri mandolenle 2 milimetre kalınlığında kestim, 8 dakikada tam istediğim çıtırlıkta oldu. 3 muz 3 kişiye atıştırmalık olarak güzel yetti, tuzu da servisten hemen önce eklemek işe yaradı.
