A light Iraqi home-style porridge for children, made by simmering fine bulgur in water until soft and stirring in tempered yogurt. Add the yogurt after removing the pot from the heat to reduce the risk of curdling.

How to make it?

Boil the bulgur

Bring the fine bulgur and water to a boil in a pot. Reduce the heat and cook, stirring occasionally, for 20 minutes, until fully soft.

Temper the yogurt

In a bowl, gradually stir a few spoonfuls of hot bulgur cooking water into the strained yogurt to bring it closer to the temperature of the bulgur.

Combine and serve

Remove the bulgur from the heat. Stir in the tempered yogurt, butter, and salt, then serve once lukewarm.

Reminder

Important: gradually temper the yogurt with hot bulgur cooking water before adding it to the bulgur, or the sudden temperature change may cause it to curdle. Contains wheat (gluten) and dairy (yogurt and butter).
