One of Greek cuisine’s hearty pilafs for feeding a crowd, this dish is made by mixing rice with ground beef seasoned with cumin and cinnamon and cooked in a tomato sauce. It is well suited to serving from a large platter when entertaining.

Add the tomato paste and water and simmer over low heat for 40 minutes.
Add the rinsed rice and cook over low heat for 25 minutes, until the liquid is absorbed.
Remove from the heat and let rest, covered, for 15 minutes.
Make sure the sauce is boiling before adding the rice, or the rice may not cook through.
