A hearty Turkish breakfast classic, thinly sliced beef liver is quickly cooked in a pan with onions and spices. Thin slicing helps the liver stay tender rather than turning rubbery during the short cooking time. Freeze it after cooking in small portions for an easy addition to lunchboxes.
Lightly coat the thinly sliced liver in flour.
Sauté the onion in olive oil, then add the liver, red pepper flakes and salt. Sauté for 10 minutes.
Transfer to a serving plate and sprinkle with a pinch of sumac.
Slice the liver thinly; thick slices may remain raw in the middle during the short cooking time. Contains gluten from the flour.
