Inspired by Saudi Arabia’s date tradition, this compote is quickly cooked with oats and cinnamon in a pressure cooker until soft. Whole-grain oats make it a filling snack.
Chop the pitted dates and place them in the pressure cooker.
Add the rolled oats, water, cinnamon, and lemon juice. Close the lid and cook for 10 minutes from when the pressure cooker begins making its boiling sound.
Remove the cooker from the heat and wait for the steam to release naturally.
Open the lid and lightly mash the mixture with a fork until soft. Serve warm or cold.
Wait for the steam to release naturally before removing the compote from the pressure cooker; otherwise, hot liquid may splatter.
