Date yogurt ice cream is a light Syrian dessert made by sweetening strained yogurt with date puree and honey, then freezing it. A whole-wheat oat crumble sprinkled on top adds a crisp texture to this low-calorie dessert.

Bake the granola

Mix the oats, whole-wheat flour, and olive oil. Spread in a thin layer on a parchment-lined baking sheet and bake in a preheated 170°C / 340°F oven for 10 minutes, stirring once, until golden.

Prepare the yogurt mixture

Mix the strained yogurt with the mashed dates and honey until smooth.

Freeze

Pour the mixture into a wide container and freeze for 4 hours, stirring it with a fork every hour. Garnish with the oat crumble when serving.

Reminder

While freezing the mixture, stir it with a fork every hour; otherwise, large ice crystals may form and leave it grainy. Watch the granola closely in the oven; the thin layer of oats can burn in seconds. Contains gluten (oats and whole wheat) and milk (yogurt).
