Datemaki is a decorative egg dish served for Japanese New Year. A sweet egg mixture blended with white fish fillet is cooked in an air fryer, then rolled tightly while hot. Once cooled, it is sliced to show its pattern.
Blend the white fish fillet until smooth, then whisk it thoroughly with the egg, granulated sugar, and soy sauce.
Pour the mixture into a greased square pan that fits in the air fryer. Cook at 170°C / 340°F for 14–16 minutes, until the surface is firmly set. If you do not have an air fryer, bake for the same time in a preheated oven.
Remove the cooked egg from the pan and invert it onto a woven rolling mat. Roll it tightly while still hot and secure the ends with rubber bands.
Let the roll cool completely, remove the rubber bands, and slice with a sharp knife to serve.
As soon as the egg mixture comes out of the air fryer, roll it tightly on a woven rolling mat while it is still hot; it may crack if you try to roll it after cooling. Allergens: egg and fish. Also check the soy sauce label for gluten; ingredients vary by product.
