Shrimp, mussels and squid come together in a tomato and olive oil stew for a satisfying main course. With a variety of seafood in one dish, it makes an attractive, flavorful centerpiece for guests.
Sauté the onion and garlic in olive oil. Add the grated tomato, tomato paste, red pepper flakes and salt and cook over low heat for 10 minutes.
Add the squid rings to the sauce and cook over low heat for 10 minutes.
Add the shrimp and mussel meat and cook for another 5-6 minutes, until they change color. Watch the shrimp closely: overcooking makes them tough.
Remove from the heat and let rest for a few minutes. Garnish with chopped parsley and serve hot.
Do not add all the seafood at once: each type has a different cooking time. Add the squid first, followed by the shrimp and mussels toward the end. Contains crustaceans (shrimp) and mollusks (mussels and squid).
