Pickles and preserves
These Vietnamese pickles are made by soaking thin strips of radish and carrot in a lightly tangy brine of sugar, vinegar and salt. A classic accompaniment to banh mi sandwiches, they are ready to use in a few hours.
Cut the radish and carrot into thin strips and place in a bowl.
Sprinkle salt over the cut vegetables and leave for 5 minutes. Squeeze them gently by hand and discard the excess liquid.
Dissolve the sugar in the vinegar and water, pour over the drained vegetables and mix gently.
Transfer to a jar and refrigerate for at least 2 hours. The longer the pickles stand, the more pronounced their tang will be.
Salt the vegetables and drain their liquid first; otherwise the pickles will become watery and spoil quickly. The longer they stand, the more pronounced their tang will be. Wait at least 2 hours before using.
