Dobo is made by deboning a lamb shoulder, opening a pocket in the meat, and stuffing it with rice and plenty of garlic. Garlic is the main ingredient here, not just a seasoning: two whole heads go in, clove by clove, and soften and sweeten completely during the long cooking. In Mardin, it is served at holidays and weddings.

How to make it?

Make a pocket in the lamb shoulder

Ask your butcher to remove the bone from the lamb shoulder, or carefully cut the meat away from the bone with a sharp knife. Use the tip of a knife to open a wide pocket in the thickest part of the meat without piercing the outer surface. Leave an opening about two fingers wide.

Prepare the filling

In a bowl, combine the soaked and rinsed rice, peeled whole garlic cloves, softened butter, allspice, black pepper, and half the salt. Do not chop the garlic; the whole cloves hold together and turn sweet as they cook.

Stuff and sew

Spoon the filling into the pocket, leaving some room for expansion. Sew the opening closed with kitchen twine or a thick needle. Rub the outside of the shoulder with the remaining salt.

Place in the pot

Place the stuffed shoulder in a deep pot with the seam facing up. Pour the hot water in along the side; it should cover three-quarters of the meat, but not submerge it.

Cook over low heat

120 min

Cover the pot and cook over the lowest heat for 2 hours. The dish is ready when a skewer inserted into the thickest part of the meat meets no resistance, the juices run clear, and the rice inside is soft enough to mash. Cut away the twine and slice the lamb.

Reminder

Soak the rice in warm salted water for 20 minutes, then rinse it before stuffing the lamb. Do not fill the pocket to the top; the rice doubles in size as it cooks, and an overfilled pocket can burst at the seam.
