Remove the cooked apricots from the heat with the syrup and let them cool to room temperature.
Gently open the centers of the cooled apricots and fill each with one 5 ml measure of kaymak.
Sprinkle the filled apricots with crushed walnuts and, if desired, pistachios, then serve.
Important: The apricots can fall apart if simmered in the syrup for too long, so cook them over low heat only until tender. Allergen note: contains walnuts (tree nuts) and dairy (milk/kaymak); tell anyone with a nut allergy before serving.
