Ice cream and chilled desserts
This light dessert is made by simmering dried figs in a clove-scented syrup, then chilling them before serving with kaymak (Turkish clotted cream) and pistachios. The spiced syrup balances the figs’ natural sweetness, making the dish a good fit for brunch.
Bring the sugar and water to a boil with the cloves and cinnamon stick. Cook until the mixture thickens into a syrup.
Add the dried figs to the syrup and simmer over low heat for 25 minutes, until tender.
Let the cooked figs cool in their syrup to room temperature, then refrigerate for 2 hours.
Divide the chilled figs among serving plates and serve topped with kaymak and coarsely chopped pistachios.
Do not simmer the figs for longer than 25 minutes or they may fall apart and lose their shape. Contains dairy (kaymak) and tree nuts (pistachios).
