A classic at Anatolian wedding feasts, this pilaf is made by simmering cubed beef, then cooking rice in butter with the strained beef broth. The long simmering and resting times are essential for fluffy, separate grains.

How to make it?

Simmer the beef and reserve the broth

90 min

Place the cubed beef and onion in a pot with plenty of water. Cover and simmer over low heat for 90 minutes, skimming off the foam regularly. Strain and reserve the beef broth.

Prepare the rice

20 min

Soak the rice in warm salted water for 20 minutes, then rinse it.

Cook the pilaf

25 min

Lightly sauté the cooked beef in the butter, then add the rice. Pour in the reserved beef broth, add the salt, and cook over low heat for 25 minutes, until the liquid is absorbed.

Rest and serve

15 min

Remove the pilaf from the heat, place a clean paper towel over it, and let it rest for 15 minutes. Sprinkle with black pepper and serve.

Reminder

Skim the foam regularly while simmering the beef; leaving it in can cloud the broth and affect the pilaf’s flavor. Contains milk (butter).

Tereyağı yerine az miktarda zeytinyağıyla karıştırarak yaptım, pilav biraz daha hafif oldu ama o klasik kavurma kokusunu tam veremedi. Yine de sindirimi kolaylaştırdığı için ailemde tercih ediliyor.

Peçete ile demlendirme adımını atlayıp hemen servis ettim, pilav biraz yapışkan ve ıslak kaldı, tanecikler tam ayrılmadı. Tarifte 15 dakika demlendirme yazıyormuş, meğer o adım gerçekten gerekliymiş.

Haklısınız, o 15 dakikalık demlenme buharın pirince geri dönüp tanelerin ayrılmasını sağlıyor; atlanınca pilav ıslak kalıyor. Peçete yoksa temiz bir kağıt havluyla da aynı sonucu alabilirsiniz.

Pirinci tarifte yazan 20 dakika yerine yarım saat suda bekletince bazı taneler fazla yumuşayıp pişerken dağıldı, tanecikler bulanıklaştı. Bir dahakine tam 20 dakikada çıkarıp hemen durulayacağım.

Kuşbaşı dana eti yerine kuzu but eti kullandım, et suyu daha yoğun ve biraz yağlı çıktı ama pilavın tadını daha da zenginleştirdi. Haşlama süresini 90 dakikadan 70 dakikaya indirebildim çünkü kuzu daha çabuk yumuşuyor.
