Place the fish fillets in a pressure cooker and add water. Close the lid and cook over medium heat for 3 minutes after it whistles.
Bring the vinegar, onion, hot pepper, bay leaf, and salt to a boil in a saucepan. Remove from the heat after 2 minutes.
Place the cooked fish in the hot brine and drizzle with olive oil. Let it stand at room temperature for at least 20 minutes.
