Toast the Pita

Fattoush is a refreshing Lebanese salad of seasonal vegetables tossed with crisp toasted pita and a pomegranate molasses dressing. Sumac adds a tangy note, making it a favorite at summer tables.
Tear the pita into small pieces and toast it in the oven or in a skillet over medium heat for 6–8 minutes, until crisp.
Combine the tomatoes, cucumber, bell pepper, radish, green onion, and parsley in a bowl.
Mix the olive oil, pomegranate molasses, and sumac, pour over the vegetables, and toss gently.
Add the crisp pita pieces just before serving and toss. If added too early, the pita will soften and break apart.
Store the vegetables and dressing separately in the refrigerator for 1 day. Keep the pita pieces in a separate uncovered container and add them just before serving.
