A comforting Filipino breakfast, lugaw is made by simmering rice in plenty of water until it becomes porridge. The unsalted base is suitable for babies, and the family portion can be seasoned afterward and reheated as a late-night snack.

How to make it?

Rinse the rice

Rinse the rice several times, until the water runs clear.

Simmer

60 min

Put the rice and water in a pot and bring to a boil. Reduce the heat to low and cook for 60 minutes, stirring occasionally.

Set aside the baby portion

Once the rice reaches a porridge consistency, transfer a portion to a separate container for the baby. Leave it unsalted and unseasoned.

Finish the family portion

Stir the ginger and green onion into the remaining porridge and serve hot.

Reminder

Stir regularly; if the porridge begins to stick to the bottom, it can give the whole pot a scorched smell.
