Marinate the fish

Large bonito, a favorite in autumn, becomes a light main course when baked with olive oil, lemon and artichoke hearts. Rich in omega-3, this recipe is ideal for meals with heart health in mind.
Place the bonito fillets in a large tray and rub with olive oil, lemon juice and zest, crushed garlic, thyme, salt and black pepper.
Cover the tray and marinate in the fridge for 60 minutes to let the fish absorb the flavors.
Halve the artichoke hearts and toss with olive oil, having briefly soaked them in lemon water to keep the cut surfaces from browning.
Arrange the artichokes around the fish in the tray. Bake in an oven preheated to 190°C / 375°F for 30 minutes, until the fish flakes easily.
Take the fish out at least 45 minutes before baking and bring it to room temperature; cold fish will cook unevenly. As you prepare the artichokes, put the cut surfaces straight into lemon water to prevent browning.
