A refined French bistro terrine is made by seasoning monkfish liver, steaming it, then packing it into a mold and chilling it for several hours. The result is low-carb and nut-free, making an elegant starter.

How to make it?

Season the Liver

Rub the monkfish liver with salt, red pepper flakes, black pepper, and lemon zest.

Wrap and Steam

20 min

Wrap the seasoned liver tightly in plastic wrap and steam it for 20 minutes.

Place in a Mold

15 min

Remove the cooked liver from the plastic wrap and place it in a narrow terrine mold. Set a weight on top.

Chill and Rest

360 min

Chill the mold in the refrigerator for at least 6 hours, preferably overnight, until the terrine is firm enough to slice.

Reminder

Press out any air bubbles before wrapping the liver in plastic wrap; otherwise, the terrine may fall apart when sliced. Allergen: contains fish (monkfish liver).

Buharda pişirme süresini 20 dakika yerine 25 dakika yaptım, karaciğer biraz daha yoğun bir doku aldı. Soğutmayı 6 saat yerine 4 saatte kestim, dilimleme biraz zorlaştı ama yine de mümkün oldu.

Karaciğeri streç filme sararken hava boşluğu kalmasın diye çok sıkı sardım, film yer yer yırttı; daha esnek film mi kullanmalıyım yoksa çift kat mı sarmalıyım? Tadı ve kıvamı yine de çok başarılıydı.

Terrin 6 saat sonunda mükemmel dilimlendi, kenarları hiç dağılmadı. Limon kabuğu rendesi tada hafif bir ferahlık kattı.
