Boil the beets, unpeeled, in plenty of water until tender.
Once the boiled beets have cooled, peel and cut them into cubes or slices. Important: Peeling hot beets can stain your hands; we recommend wearing gloves.
Mix the yogurt with the crushed garlic and salt.
Spoon the garlic yogurt over the chopped beets. Drizzle with olive oil, add the optional walnuts, and serve.
