Geelrys, a mildly sweet yellow rice from South Africa’s Cape Malay cuisine, gets its color from turmeric and cinnamon, while raisins add sweetness. Made with whole-grain brown rice and cooking oil alone, it makes a whole-grain, dairy-free option for breakfast.

Step by Step

How to make it?

1

Toast the spices, then add the rice

3 min

Toast the turmeric and cinnamon in the cooking oil for 1 minute. Add the rinsed brown rice and stir.

2

Cook the rice

25 min

Add the water, salt and brown sugar. Once it comes to a boil, cover and cook over low heat for 25 minutes.

3

Rest with the raisins

10 min

Add the raisins and remove from the heat. Keep covered and leave to steam for 10 minutes.

4

Fluff and serve

2 min

Fluff with a fork and serve hot.

Reminder

Brown rice takes longer to cook than white rice. Do not take it off the heat just because it has absorbed the water; the grains may still be firm.

Kuru üzüm yerine kuru kayısı doğrayıp kullandım, tatlılığı biraz daha az oldu ama ekşimsi bir ton kattı ve çocuklarım normalde üzümü ayıklarken bunu ayıklamadan yediler.
