Cookies
A simple German cookie, Haferkekse is made by mixing rolled oats with honey and olive oil and baking the dough. Replacing the solid fat in the classic recipe with olive oil turns these into a heart-friendly snack.
Whisk together the olive oil, honey, and egg. Add the rolled oats, flour, cinnamon, baking powder, and salt, then knead to combine.
Shape the dough into flat rounds and arrange them on a baking pan.
Bake in an oven preheated to 170°C / 340°F for 18 minutes, until the edges are lightly golden.
Do not remove the cookies from the baking pan as soon as they come out of the oven; they are fragile while hot. Let them cool on the pan for a few minutes. Allergen: contains gluten (flour) and egg.
