Gibanica is a popular Balkan pie made by crumpling thin pastry sheets and layering them with a white cheese and egg mixture. The crumpled layers bake up both crisp and airy. Made with ready-made pastry sheets, it cooks quickly and can also be taken cold on a picnic.

Prepare the filling

Crumple the pastry sheets

Briefly dip each pastry sheet in the filling and loosely crumple it.

Arrange in the baking dish

Loosely arrange the crumpled pastry sheets in a greased baking dish and pour the remaining filling between them.

Reminder

Yufkaları harca batırırken tam olarak kaç saniye bekletmeliyim, çok kısa tutarsam katmanlar yeterince yumuşamayıp pişerken beklediğimden çok daha çıtır ve gereğinden sert mi kalır acaba?
